A peer reviewed paper which describes a study which analyses known species nitrogen content to determine the 鈥渘itrogen factor鈥�, which is used in independent analysis of label declarations of named fish content.

The study also proposes a nitrogen factor for salmon mince derived by machine recovery from the residual salmon flesh remaining on the salmon 鈥渇rames鈥� after removal of the fillets.
